I made this recipe on a day when I wasn’t feeling 100 percent. And I still pulled it off. You can pull it off too in less time than it takes to order takeout.

I wasn’t feeling myself the first few days back home. But when I went to the grocery store to pick up a few necessities I saw a pack of wild-caught salmon that was just calling my name.

You know I had to get it! Plus I had some broccoli that had been sitting in the fridge since we left home. Voila a recipe was born! And most importantly, my family had a tasty wholesome meal to enjoy!

INGREDIENTS FOR SALMON AND BROCCOLI SHEET PAN

You need just a few ingredients for sheet pan salmon and broccoli.

  • Salmon
  • Olive Oil
  • Salt and Pepper
  • Garlic Powder
  • Paprika
  • Broccoli

STEPS FOR MAKING SHEET PAN SALMON AND BROCCOLI

  1. Pat salmon dry. Use good quality paper towels to soak out the excess moisture from the fish.

2. Season the salmon. Rub olive oil, salt, pepper, garlic powder, and paprika on both sides of the fish whether you’re using a big piece of fish or portioned fillets.

3. Place the salmon on a sheet pan. The sheet pan should be lined with parchment paper for easy cleanup.

4. Season the broccoli. Toss the broccoli with olive oil, salt, and pepper.

5. Place broccoli on the sheet pan. Arrange the broccoli on the sheet pan.

HOW TO TELL SALMON IS DONE

A simple way to tell if salmon is done is to flake the fish with a fork. If the fish flakes easily then it is done.

Also, you could use an instant-read digital thermometer to test the fish for doneness. Insert the thermometer into the thickest part of the fish. If it reads about 130 degrees Fahrenheit then the fish is done.

VARIATIONS

  • Use another vegetable. Try using other vegetables like zucchini, brussel sprouts, or bell peppers in this recipe.
  • Use a different fish. Instead of salmon, you could use different kinds of fish like trout, whiting fish, snapper, tilapia, and so on.
  • Use different seasoning. Try seasoning your fish with other kinds of seasoning like cajun seasoning, Italian seasoning or any seasoning you like.
  • Steam the broccoli instead. This is for those who don’t like roasted broccoli. Only one of my girls enjoys roasted broccoli. So you could cook the salmon in the oven then steam or saute the vegetable instead.

  • 1 ½ pounds salmon, room temperature thawed if frozen
  • 1 ½ Tablespoons olive oil, divided
  • ½ teaspoon salt, divided
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ¼ teaspoon ground black pepper, divided
  • 3 cups broccoli florets

Instructions

  1. Preheat oven to 425°F. Line a 9 by 13 baking sheet with parchment paper.
  2. Pat salmon dry with paper towels.
  3. Drizzle 1 tablespoon of olive oil on both sides of salmon.
  4. Sprinkle just under ½ a teaspoon of salt on both sides of the salmon. Reserve the remaining salt for the broccoli.
  5. Rub the garlic powder, paprika and ⅛ teaspoon black pepper all over the salmon. Place on a 9 by 13 inch baking sheet lined with parchment paper.
  6. In a large bowl combine the broccoli florets, remaining half tablespoon of olive oil, remaining salt and ⅛ teaspoon of black pepper. Toss well to combine then arrange the broccoli on the same sheet as the salmon.
  7. Place the sheet in the oven. Bake for 15 minutes until salmon is fully cooked. It should be opaque around the edges and a digital thermometer inserted into the thickest part of the fish should read about 135°F.
  8. Serve the Salmon and Broccoli Sheet Pan Dinner warm.\

1. Lining the baking sheet with parchment paper makes for easy cleanup and prevents the fish from sticking to the pan.
